- In a small skillet, heat 2 tablespoons of the oil; sauté shallots until golden brown; drain.
- For each serving, place a crouton on a serving plate and layer one of each type of tomato slice on top of the crouton with shallots, basil, blue cheese, and bacon between each layer of tomatoes and around each plate.
- Drizzle each tower with balsamic vinegar glaze and the remaining olive oil, garnish with cherry tomatoes and basil leaves; serve immediately.
