Heirloom Tomato Towers

Ingredients:

Heirloom Tomato Towers

  • 1/4 cup minced shallots
  • 6 tablespoons extra virgin olive oil
  • 4 (3-inch round) toasted croutons*
  • 4 slices red vine-ripened tomato
  • 8 slices green zebra heirloom tomato
  • 4 slices yellow heirloom tomato
  • Fresh basil leaves
  • 1/4 cup crumbled blue cheese
  • 8 slices bacon, minced and browned
  • Balsamic vinegar glaze**
  • 16 cherry tomatoes, cut in halves

Directions:

  1. In a small skillet, heat 2 tablespoons of the oil; sauté shallots until golden brown; drain.
  2. For each serving, place a crouton on a serving plate and layer one of each type of tomato slice on top of the crouton with shallots, basil, blue cheese, and bacon between each layer of tomatoes and around each plate.
  3. Drizzle each tower with balsamic vinegar glaze and the remaining olive oil, garnish with cherry tomatoes and basil leaves; serve immediately.

Makes 4 servings.

*Cut a 3-inch circle out of the center of a slice of toasted bread.
**In a small saucepot, add 3 tablespoons balsamic vinegar; simmer until reduced by 1/2.
