Herb Chicken

Ingredients:

Herb Chicken

  • 5 lb chicken thighs
  • 3 tablespoons salad oil
  • 1 tablespoon dried oregano leaves, crushed
  • 2 teaspoons salt
  • 1 teaspoon garlic powder
  • 1/4 teaspoon pepper
  • 3 tablespoons achiote oil

Directions:

  1. Rinse chicken pieces; dry well.
  2. Combine salad oil, oregano, salt, garlic powder, and pepper.
  3. Coat chicken pieces with seasoning mixture; place in a baking pan.
  4. Bake in electric oven at 350°F for 30 minutes.
  5. Baste chicken with achiote oil and continue baking for 30 more minutes.

Makes 8 to 10 servings.
