Homemade Chicken Stock

Ingredients:

Homemade Chicken Stock

  • 2 tablespoons salad oil
  • 2 lb chicken wings
  • 1 onion, chopped (skin on)
  • 1 carrot, chopped
  • 1 tomato, chopped
  • 1/2 bulb garlic, cut in half (skin on)
  • 2 quarts water
  • 5 sprigs fresh thyme
  • 1 bunch fresh parsley stems

Directions:

  1. In a saucepot, heat oil and cook chicken until golden brown.
  2. Add onion, carrot, tomato, and garlic; cook until golden brown.
  3. Add water and herbs.
  4. Bring to a boil, lower heat, and simmer for 3 to 4 hours.
  5. Strain.

Makes 2 quarts.
