- Melt chocolate chips and coconut oil in a uncovered, microwave-safe bowl on medium-high for 2 minutes, stirring every 30 seconds, until just melted and smooth.
- In a separate bowl, combine peanut butter, honey, powdered sugar, graham crackers, and butter.
- Mix until well incorporated.
- Spoon about 1 teaspoon of chocolate into each cup.
- Roll peanut butter into small balls about the size of a penny.
- Flatten slightly and place on top melted chocolate, pressing down gently into chocolate.
- Top each with an additional teaspoon of melted chocolate.
- Refrigerate for 20 minutes or until firm.
- Store in covered container in the refrigerator.
