Homestyle Turkey Noodle Soup

Ingredients:

Homestyle Turkey Noodle Soup

  • 6 cups turkey stock
  • 2 large carrots chopped
  • 2 celery ribs chopped
  • 1/2 onion diced
  • 1 bay leaf
  • 1/4 heaping teaspoon dried oregano
  • 1/4 heaping teaspoon dried basil
  • 1/8 teaspoon ground thyme
  • 1 1/2 cups pasta, cooked according to package instructions
  • 2 cups leftover turkey meat, shredded
  • Salt and pepper to taste

Directions:

  1. In a large pot, over medium-high heat, add turkey stock and bring to a simmer.
  2. Add carrots, celery, onion, and spices.
  3. Simmer for 20-25 minutes, until vegetables are tender.
  4. Stir in pasta and leftover turkey meat into the broth and vegetables.
  5. Add more salt and pepper to taste.
  6. Bring to a simmer and cook for 1 minute to make sure the turkey is heated through.

Serves 4.
