- In a large pot, over medium-high heat, add turkey stock and bring to a simmer.
- Add carrots, celery, onion, and spices.
- Simmer for 20-25 minutes, until vegetables are tender.
- Stir in pasta and leftover turkey meat into the broth and vegetables.
- Add more salt and pepper to taste.
- Bring to a simmer and cook for 1 minute to make sure the turkey is heated through.
