Honeybee Home for Dinner Chicken

Ingredients:

Honeybee Home for Dinner Chicken

  • 1/4 cup freshly squeezed lemon juice
  • 1/4 cup and 2 tablespoons local honey, divided
  • 2 tablespoons Dijon mustard
  • 1 tablespoon chopped fresh rosemary
  • 3 cloves garlic, minced
  • Pinch of cayenne pepper
  • 1/4 cup olive oil
  • 3 pounds chicken drumsticks
  • Sea salt to taste

Directions:

  1. Combine lemon juice, 1/4 cup honey, mustard, rosemary, garlic, cayenne, oil, and salt to taste in a large resealable plastic bag.
  2. Seal and shake vigorously to blend, add drumsticks.
  3. Seal bag; making sure to remove all the air.
  4. Let marinate for 1 hour.
  5. Preheat oven to 375°F.
  6. Place drumsticks on a large roasting pan and drizzle the remaining honey.
  7. Roast for 45 minutes or until cooked through; rotating the pan every 10-12 minutes.

Makes 6 servings.
