Ice Cream Special

Ingredients:

Ice Cream Special

  • 1 scoop vanilla ice cream
  • 2 tablespoons gingersnap cookie crumbs
  • 1 tablespoon salad oil
  • 1 (6-inch) flour tortilla, cut into wedges
  • 1 tablespoon sugar
  • 1/4 teaspoon ground cinnamon
  • 2 squares unsweetened chocolate, melted
  • Whipped cream
  • Maraschino cherry

Directions:

  1. Coat scoop of ice cream with cookie crumbs; freeze until ready to use.
  2. In a non-stick skillet, heat oil.
  3. Fry tortilla; drain.
  4. Combine sugar and cinnamon; sprinkle on fried tortilla.
  5. Dip the wide edge of tortilla in chocolate.
  6. Place ice cream on dessert plate.
  7. Pipe whipped cream around base and on top of ice cream.
  8. Arrange tortilla wedges around ice cream; top with a cherry.

Makes 1 serving.
