Island Baked Beans

Ingredients:

Island Baked Beans

  • 1 can (8 oz) crushed pineapple, drained
  • 1/2 cup tomato-based barbecue sauce
  • 1/4 cup brown sugar
  • 2 tablespoons lime juice
  • 1 tablespoon minced ginger root
  • 2 teaspoons dry mustard
  • 2 cans (16 oz size) black beans, drained and rinsed
  • 1/2 cup chopped green onions

Directions:

  1. In a shallow 1 1/2 to 2-quart casserole, combine pineapple, barbecue sauce, sugar, lime juice, ginger, and mustard.
  2. Stir in beans and onions.
  3. Stirring occasionally, bake uncovered at 325ºF in electric oven for about 25 to 30 minutes.

Makes 6 servings.
