Jailhouse Rock Cupcakes

Ingredients:

Jailhouse Rock Cupcakes

  • 1 1/2 cups all-purpose flour
  • 3/4 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2 cups mashed apple bananas
  • 2 large eggs
  • 1 teaspoon pure vanilla extract

Frosting:

  • 1 cup butter, room temperature
  • 1 cup creamy peanut butter
  • 4 cups powdered sugar, divided
  • 1/4 cup milk
  • 2 teaspoons vanilla
  • 5 slices maple flavored bacon, cooked till crisp and crumbled

Directions:

  1. Preheat oven to 350°F.
  2. Line a standard 12-cup muffin pan with cupcake liners.
  3. In a medium bowl, whisk together first five ingredients.
  4. Make a well in the flour mixture and add remaining ingredients.
  5. Stir to incorporate.
  6. Pour evenly into muffin pan.
  7. Bake for 25-30 minutes.
  8. Remove from pan and cool completely on a wire rack.
  9. With a hand-mixer, cream butter and peanut butter.
  10. Add half the sugar and blend until combined.
  11. Blend in milk, vanilla, and remaining sugar until smooth.
