Jerky Turkey Burgers

Ingredients:

Jerky Turkey Burgers

  • 1/2 cup dry bread crumbs
  • 3 tablespoons chopped green onions
  • 3 tablespoons minced fresh parsley
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Caribbean jerk seasoning (available at local health food stores)
  • 1/2 teaspoon salt
  • 1 1/4 pounds ground turkey
  • 1 teaspoon olive oil
  • 4 whole wheat hamburger buns, split
  • 4 lettuce leaves
  • 1 medium mango, peeled and sliced
  • 4 (1/4-inch thick) rings sweet red pepper

Directions:

  1. In a large bowl, combine the bread crumbs, green onions, parsley, Worcestershire sauce, jerk seasoning and salt.
  2. Crumble turkey over the mixture and mix just until combined.
  3. Shape into four 1/2-inch thick patties.
  4. In a large skillet, heat oil; cook patties over medium heat for 5 minutes on each side or until no longer pink.
  5. Serve on buns with lettuce, mango slices and red pepper rings.

Makes 4 servings.
