Jicama Mango Slaw

Ingredients:

Jicama Mango Slaw

  • 2 large half-ripe mangoes, peeled and cut into matchstick julienne
  • 1 large carrot, peeled and cut into matchstick julienne
  • 1 red bell pepper, cut into matchstick julienne
  • 1/2 large jicama, peeled and cut into matchstick julienne
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon agave nectar (available at health food stores and most local supermarkets)
  • 1 tablespoon olive oil
  • 1 1/2 tablespoons fresh lime juice (adjust to taste)
  • 1 1/2 tablespoon minced fresh mint
  • 1 teaspoon lime zest

Directions:

  1. Combine the mangoes, carrot, red bell pepper, and jicama in a large bowl.
  2. Whisk the vinegar, agave nectar, and olive oil, and lime juice together in a separate bowl; pour over the mango mixture.
  3. Sprinkle the mint and lime zest over the mixture; toss to mix.
  4. Chill at least 30 minutes before serving.

Makes 6 servings.
