Jicama Mango Slaw
- 2 large half-ripe mangoes, peeled and cut into matchstick julienne
- 1 large carrot, peeled and cut into matchstick julienne
- 1 red bell pepper, cut into matchstick julienne
- 1/2 large jicama, peeled and cut into matchstick julienne
- 1 tablespoon apple cider vinegar
- 1 tablespoon agave nectar (available at health food stores and most local supermarkets)
- 1 tablespoon olive oil
- 1 1/2 tablespoons fresh lime juice (adjust to taste)
- 1 1/2 tablespoon minced fresh mint
- 1 teaspoon lime zest
