Keto Egg Muffins

Ingredients:

Keto Egg Muffins

  • 8 local fresh eggs, whisked
  • 8 slices bacon or 1/2 cup sausage crumbles or diced Spam, cooked and crisped
  • 1/2 cup shredded cheese, plus more for topping
  • 1/2 cup fresh spinach, chopped
  • Salt and pepper to taste

Directions:

  1. Heat oven to 350°F.
  2. Grease muffin pan.
  3. In a large bowl, mix ingredients together and carefully pour into pan.
  4. Bake for about 20 minutes until eggs are springy to touch or slightly browned.
  5. Top with a little more cheese for last 3 to 5 minutes or until melted.

Serves 4.
