Key Lime Mac Nut Energy Bites

Ingredients:

Key Lime Mac Nut Energy Bites

  • 3/4 cup Medjool dates, pitted
  • 1 cup macadamia nuts
  • 1/2 cup shredded coconut
  • 2 tablespoon lime zest
  • 3 tablespoon lime juice
  • Pinch of sea salt

Directions:

  1. Add dates to a blender and blend into small bits.
  2. Add macadamia nuts, shredded coconut, lime zest, juice, and a pinch of salt and blend until a smooth batter like consistency has formed.
  3. Scoop out tablespoon sized amounts of the mixture and roll into balls.
  4. Roll in extra shredded coconut coating the outside of each ball.
  5. Store balls in the refrigerator in a sealed container for approximately a week or keep them in the freezer for up to 3 months.

Makes 2 dozen.
