Kicked-Up Kaki Mochi (Spicy Oriental Cereal Mix)

Ingredients:

Kicked-Up Kaki Mochi (Spicy Oriental Cereal Mix)

  • 2 packages (12 ounce size) rice and oat cereal squares
  • 1/2 cup butter
  • 1/2 cup light corn syrup
  • 1/2 cup salad oil
  • 1/2 cup sugar
  • 2 tablespoons soy sauce
  • 1 to 2 teaspoons hot pepper sauce
  • 2 packages (1.05 ounce size) nori goma furikake (seasoned seaweed and sesame seed mixture)
  • 2 packages (4.58 ounce size) roasted green peas or 1 package (8 ounce) wasabi peas (horseradish-flavored peas)
  • 2 packages (4 ounce size) small iso (soy sauce-flavored) peanuts

Directions:

  1. Preheat electric oven to 250°F.
  2. Spray a large deep baking pan with non-stick cooking spray.
  3. Put cereal in prepared pan.
  4. In a saucepan, heat butter with corn syrup, salad oil, sugar, soy sauce, and hot pepper sauce; stir until sugar dissolves.
  5. Pour over cereal mixture; mix lightly.
  6. Sprinkle furikake over mixture.
  7. Bake uncovered for 1 hour; mix lightly every 15 minutes.
  8. Stir in peas and peanuts.
  9. Cool and store in airtight containers.

Makes 5 1/2 quarts.
