Kipuka Cafe's Char Siu Chicken with Baby Bok Choi

Ingredients:

Kipuka Cafe's Char Siu Chicken with Baby Bok Choi

Marinade:

  • 2 1/2 cups sugar
  • 2 cups low-sodium shoyu
  • 1/2 cup hoisin sauce (available in the Asian section)
  • 1/4 cup oyster sauce
  • 1 teaspoon Chinese five spice (available in the Asian section)
  • 5 pounds chicken boneless, skinless thighs
  • 6 bunches baby bok choi

Directions:

  1. In a large bowl, combine sugar, shoyu, hoisin sauce, oyster sauce, and Chinese five spice.
  2. Add chicken and marinate for 24-36 hours.
  3. On broil setting, cook chicken until cooked (internal temperature should be at least 165°F and juices run clear).
  4. In the meantime, in a large pot of boiling water, blanch baby bok choi; drain.
  5. To serve, place chicken on plate and lay baby bok choi over top.

Makes 6 servings.
