Koele Palau (Sweet Potato Dessert)

Ingredients:

Koele Palau (Sweet Potato Dessert)

  • 4 cups mashed cooked sweet potatoes
  • 1/2 cup skim milk
  • 1/4 cup grated coconut

Directions:

  1. Preheat electric oven to 350°F.
  2. Spray a 1-quart baking dish with a non-stick spray.
  3. In a bowl, combine all the ingredients.
  4. Spoon mixture into prepared pan and bake, uncovered, for 20 minutes or until top is lightly browned.

Makes 8 servings.
