Lazy Champuru

Ingredients:

Lazy Champuru

  • 4 strips bacon, cut into 1/2-inch pieces
  • 1 teaspoon sesame oil
  • 1 large bitter melon, seeds removed and sliced
  • 1/8 cup dashi (Japanese soup base)
  • Cooked shredded pork
  • 1 block tofu
  • Black pepper (to taste)

Directions:

  1. Place bacon in a large saute pan and render the bacon fat.
  2. Remove bacon; set aside.
  3. Save oil for another recipe.
  4. Pan will be flavored with the bacon.
  5. Add sesame oil, then the bitter melon.
  6. Fry for about one minute on medium high.
  7. Keep pan as hot as possible without burning the oil.
  8. Add dashi, then the bacon and pork.
  9. Break block of tofu into pan by hand.
  10. Add black pepper to taste.
  11. Remove champuru from heat as soon as bitter melon turns bright green.
  12. The bitter melon cooking time should be no more than 2-3 minutes.

Serves 4.

Alternative: For dry champuru, substitute 2 teaspoons dashi granules in place of the 1/8 cup dashi.
