Lemon Bars

Ingredients:

Lemon Bars

Crust:

  • 2 cups flour
  • 1/2 cup powdered sugar
  • 1 cup butter or margarine, chilled

Topping:

  • 4 eggs
  • 1 1/2 cups sugar
  • 1/3 cup lemon juice
  • 1/4 cup flour
  • 1/2 teaspoon baking powder
  • Powdered sugar for dusting

Directions:

Crust:

  1. Preheat oven to 350°F.
  2. Grease a 13 x 9 x 2-inch pan.
  3. In a large bowl, mix together flour and powdered sugar.
  4. Cut butter into flour mixture using a pastry blender or two forks, until the mixture resembles coarse crumbs.
  5. Gently press into prepared pan.

Bake for 20 minutes.

Topping:

  1. Beat together eggs; add sugar and lemon juice.
  2. To egg mixture, add flour and baking powder; mix well, pour over crust.
  3. Bake 20 to 25 minutes, or until the top is slightly brown and the edges are a dark golden brown.
  4. Sprinkle top with powdered sugar.
  5. Cool, then cut into bars.

Makes 24 bars.
