Lemongrass Beef Soup

Ingredients:

Lemongrass Beef Soup

  • 1 stalk lemongrass
  • 2 1/2 quarts water
  • 1 tablespoon uncooked jasmine rice
  • 1/2 lb thinly sliced top sirloin
  • 4 to 8 teaspoons lime juice
  • 2 teaspoons sugar
  • 2 teaspoons seeded and chopped chili pepper (optional)
  • 1 tablespoon Thai fish sauce
  • 4 teaspoons chopped purple basil
  • 4 teaspoons chopped green onions
  • Freshly cooked jasmine rice

Directions:

  1. Crush lemon grass and cut in half.
  2. In a large sauce pot, add lemongrass, water, and the 1 tablespoon rice.
  3. Cover and bring to a boil; lower heat and simmer for 30 minutes.
  4. Cut beef slices into 2-inch strips; place in a large soup bowl.
  5. Add lime juice, sugar, chili pepper, fish sauce, basil, and green onions.
  6. Pour hot stock into bowl.
  7. Stir before serving.
  8. Serve with cooked jasmine rice.

Makes 4 servings.
