Lime Mango Mousse in Chocolate Cups

Ingredients:

Lime Mango Mousse in Chocolate Cups

  • 10 ounces bittersweet chocolate
  • 8 foil-lined baking cups
  • 1 8-ounce package cream cheese
  • 1 large ripe mango, peeled, seeded, and pureed (about 1 cup)
  • 1/2 cup powdered sugar
  • 1 tablespoon fresh lime juice
  • 1 teaspoon lime zest
  • 2 cups non-dairy whipped cream
  • 8 mint leaves

Directions:

  1. In a microwavable bowl, melt chocolate in the microwave in 15-second intervals stirring until smooth.
  2. Using the backside a small spoon, coat the inside of 8 foil-lined baking cups with chocolate.
  3. Place baking cups in a muffin pan and freeze for 10 minutes.
  4. Apply more chocolate to cups (about a 1/8-inch thick layer) and freeze for 1 hour.
  5. When hardened, carefully peel off foil baking cups.
  6. In a large bowl, with an electric mixer at medium speed, beat cream cheese with mango, powdered sugar, lime juice and zest until smooth.
  7. Fold in whipped cream to mango mixture.
  8. Spoon into chocolate cups; top with mint leaf and refrigerate until set.

Makes 8 servings.
