Loaded Potato Patties

Ingredients:

Loaded Potato Patties

  • 1 cup cold water
  • 1 cup instant mashed potato
  • 1 tablespoon bacon bits
  • 1 tablespoon dried chives
  • 1/4 cup grated Parmesan cheese
  • Freshly ground black pepper, to taste
  • Cayenne pepper, to taste
  • Butter flavored cooking spray

Directions:

  1. Whisk together water and potato flakes until incorporated.
  2. Stir in bacon, chives; cheese, pepper and cayenne pepper to taste.
  3. Coat a large skillet generously with cooking spray, and heat over medium high heat.
  4. Divide potato mixture into 8 equal portions and shape into 1/4 inch patties.
  5. Place the patties in skillet and cook until a well-browned crust has formed onto the bottom, about 5-7 minutes.
  6. Flip each patty and flatten slightly.
  7. Cook until other sides are browned, 7 to 8 more minutes.

Makes 8 patties.
