Local and Fruity Clafoutis (baked fruit dessert)

Ingredients:

Local and Fruity Clafoutis (baked fruit dessert)

  • 3 cups fresh seasonal local fruits, such as mango, lychee, or star fruit, diced
  • 4 eggs
  • 1/2 cup plus 2 tablespoons sugar
  • 1 cup whole milk
  • 1/2 to 1 tablespoon almond extract to taste
  • 1 teaspoon vanilla
  • 3/4 cup flour
  • 1/8 teaspoon salt
  • 1/4 cup sliced almonds, reserve 1 tablespoon
  • 2 tablespoons powdered sugar

Directions:

  1. Preheat oven to 350°F.
  2. Spray 2 quart glass dish with non-stick cooking spray.
  3. Arrange fruit in a single layer in prepared pan.
  4. In a blender or large bowl, mix eggs, 1/2 cup sugar, milk, extracts, flour and salt until smooth.
  5. Pour mixture over fruit.
  6. Evenly sprinkle with almonds and remaining 2 tablespoons sugar.
  7. Bake in oven for 45-60 minutes or until golden brown and set.
  8. Halfway through baking, sprinkle reserved almonds on top.
  9. Cool slightly and lightly dust with powdered sugar and serve warm or at room temperature.

Makes 8 servings.
