Lola's Apple Almandine Pie

Ingredients:

Lola's Apple Almandine Pie

Dough:

  • 1/2 cup butter cut in small cubes
  • 1 1/2 cup unbleached flour
  • Pinch salt
  • 1 tablespoons organic sugar

Filling:

  • 1 cup heavy cream
  • 1/3 cup organic sugar
  • Pinch salt
  • 1/2 cup almond meal
  • 1 large local egg
  • 1 1/2 large or 3 small apples (Pink Lady or Fuji), cut into cubes
  • 1 drop organic almond extract (optional)
  • 1/4 cup sliced almonds

Directions:

  1. Preheat oven to 375°F.
  2. Butter and flour a 9-inch pie pan; set aside.
  3. Mix butter, flour, salt, and sugar with tips of your fingers; add a few drops of water to form a ball.
  4. Chill in refrigerator for 30 minutes.
  5. For filling, mix cream, sugar, salt, almond flour, egg, optional almond extract and whisk until well blended.
  6. Take out dough, roll out a 10-inch by 1/8-inch thick disk in pie pan.
  7. Poke holes in dough with a fork.
  8. Add apples and pour over wet mix.
  9. Top with sliced almonds.
  10. Bake 30-40 minutes or until golden brown.

Makes 8 servings.
