- In a saute pan on medium, heat oil and add onion and garlic.
- Cook for 3 minutes or until onions are translucent.
- Add half of grapefruit, bell pepper and serrano chili; cook for 30 seconds.
- Remove from heat; stir in honey, herbs, and salt.
- Set aside.
- Grill oysters, flat-side up, over medium-high heat 4-6 minutes or until oysters begin to open.
- (Discard any oysters that do not open.)
- Remove oysters from grill and remove top shell.
- With a paring knife, loosen oysters from the shell.
- Top each oyster with relish and remaining grapefruit segments.
- Serve immediately.
