Ma Po Tofu

Ingredients:

Ma Po Tofu

  • 3 tablespoons vegetable oil
  • 1/2 pound ground pork
  • 1 teaspoon minced garlic
  • 1 tablespoon chopped green onions
  • 1 teaspoon minced ginger
  • 1 tablespoon hot chili paste (Sambal Oelek)
  • 1 block (20 ounce size) soft tofu, drained and cut into small cubes
  • 1 tablespoon cooking wine
  • 1 cup water
  • 1/2 teaspoon salt
  • 1 1/2 tablespoons soy sauce
  • 1/2 teaspoon sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon water
  • 1/4 teaspoon Szechuan peppercorn powder
  • 1/4 cup chopped Chinese parsley

Directions:

  1. Heat wok or skillet; add oil.
  2. Brown ground pork; add garlic, green onions, ginger, and chili paste; stir fry for about 2 minutes.
  3. Add tofu, wine, the 1 cup water, salt, soy sauce, and sugar; cook for 30 seconds.
  4. In a small bowl, stir together the cornstarch and 1 tablespoon water to make a slurry; stir into wok and cook for 30 seconds.
  5. Sprinkle Szechuan peppercorn powder and Chinese parsley on top; serve while hot.

Makes 4 servings.
