Macadamia Cheesecake Cookies

Ingredients:

Macadamia Cheesecake Cookies

  • 1 cup flour
  • 1/3 cup butter or margarine, softened
  • 1/3 cup brown sugar
  • 1/2 cup macadamia nut bits
  • 1 egg
  • 1 package (8 ounces) cream cheese, softened
  • 1/4 cup sugar
  • 2 tablespoons milk
  • 2 tablespoons lemon juice
  • 1/2 teaspoon vanilla

Directions:

  1. Preheat electric oven to 350°F.
  2. In small bowl of electric mixer, combine flour, butter, and brown sugar.
  3. Mix until fine particles are formed.
  4. Stir in nuts.
  5. Reserve 1 cup of mixture for topping.
  6. Press remainder into ungreased 8-inch square pan.
  7. Bake for 12 to 15 minutes or until lightly browned.
  8. In small bowl of electric mixer, combine remaining ingredients.
  9. Beat well; spread over crust.
  10. Sprinkle with reserved crumb mixture.
  11. Bake for 25 to 30 minutes.
  12. Cool; cut into squares.

Makes 16 squares.
