Macadamia Nut Brittle

Ingredients:

Macadamia Nut Brittle

  • 1 cup granulated sugar
  • 1/4 cup water
  • 1/4 cup light corn syrup
  • 1 1/2 cups macadamia nuts, chopped
  • 1 tablespoon butter
  • 1/4 teaspoon baking soda
  • Sea salt to taste, optional

Directions:

  1. In a large nonstick pan on medium heat, combine sugar, water and corn syrup and cook until light golden color, stirring occasionally, stir in chopped nuts and cook until golden, stirring constantly.
  2. Remove from heat.
  3. Stir in butter and baking soda; pour into a nonstick baking sheet pan and cool.
  4. If desired, sprinkle sea salt while hot.
  5. When cool, chop into 1/4-inch pieces; set aside.
  6. Serve as a garnish or an ingredient in desserts.

Makes about 2-1/2 cups.
