Mama's Meatloaf

Ingredients:

Mama’s Meatloaf

  • 1 cup panko (Japanese breadcrumbs)
  • 1 large onion, grated
  • 2 pounds ground beef
  • 2 eggs
  • 3 garlic cloves, minced
  • 1 teaspoon Worcestershire Sauce
  • 1/4 cup tomato ketchup
  • 1/4 cup chopped parsley
  • 1 teaspoon dried thyme
  • 2 beef bouillon cubes, crumbled
  • 1 teaspoon pepper

Glaze:

  • 1/2 cup tomato ketchup
  • 2 tablespoons cider vinegar
  • 1 tablespoon brown sugar, lightly packed

Directions:

Glaze:

  1. In a small bowl mix all ingredients together.
  2. Set aside.

Meatloaf:

  1. Heat oven to 350°F.
  2. Oil or spray a 9x5x2.5 inch loaf pan.
  3. In a large bowl, mix together breadcrumbs and onion.
  4. Add remaining ingredients.
  5. Mix well using your hands.
  6. Form into a loaf shape, pinching together then smoothing over creases and cracks.
  7. Transfer into loaf pan.
  8. Brush generously with glaze, using about half.
  9. Bake for 45 minutes.
  10. Remove from oven and brush with remaining glaze.
  11. If there is excess fat pooling, scoop or pour it out.
  12. Bake for another 30 minutes.
  13. Remove from oven.
  14. Let it stand for 10 minutes before turning out and cutting into slices.
