Mango Goat Cheese Salad

Ingredients:

Mango Goat Cheese Salad

  • 1 semi-ripe mango, peeled and cubed
  • 1/2 red onion, sliced
  • 2 ounces goat cheese, cubed
  • 1 teaspoon chopped chives
  • 1 tablespoon chopped mint
  • 1 small green chili, finely chopped
  • 10 olives, pitted
  • 1 lime, juiced
  • 1 tablespoon extra virgin olive oil
  • sea salt (optional)
  • 3 quarts mixed baby greens

Directions:

  1. In a bowl, mix together all the ingredients except the greens.
  2. Season with salt, if desired.
  3. Line a plate or salad bowl with the greens and arrange mango mixture on top.

Makes 4 servings.

180 calories, 10 g fat, 4 g saturated fat, 15 mg cholesterol, 300 mg sodium, 18 g carbohydrate, 5 g fiber, 10 g sugar, 8 g protein
