Mango Shave Ice with Ice Cream

Ingredients:

Mango Shave Ice with Ice Cream

  • 4 cups frozen mango puree or mango juice (see note below)
  • 1 pint ice cream, any flavor
  • Dried mango slices for garnish
  • Fresh mint, for garnish

Directions:

  1. Place frozen mango puree or mango juice into the ice chamber of a shave ice grinder.
  2. Top with a scoop of ice cream, then top with more shaved puree.
  3. Garnish with dried mango slices and mint, if desired.

Makes 4 servings.

To make mango puree:

  1. Peel ripe mango and remove all the flesh from the seed.
  2. Place the mango in a blender and puree.
  3. Add a little lemon juice, if desired.
  4. Measure 1 or 2 cup portions of the puree into a plastic bag or container.
  5. Seal and freeze.

Approximate Nutrient Analysis per serving:
430 calories, 20 g fat, 12 g saturated fat, 100 mg cholesterol, 100 mg sodium, 63 g carbohydrate, 4 g fiber, 56 g sugar, 6 g protein
