Mango Shortbread

Ingredients:

Mango Shortbread

Crust:

  • 1 1/4 cups butter
  • 1 cup sugar
  • 4 cups flour

Filling:

  • 1/4 cup flour
  • 2/3 cup sugar
  • 1 1/2 teaspoons cinnamon
  • 2 cups chopped mango

Directions:

  1. Preheat oven to 375°F.
  2. Cream butter and sugar.
  3. Mix in flour.
  4. Press 1/2 of the mixture into an ungreased 13 x 9 x 2-inch pan.
  5. In a large mixing bowl, combine flour, sugar, and cinnamon; fold in mangoes.
  6. Pour mango mixture over crust.
  7. Spread the remaining crust mixture over mangoes.
  8. Bake for 30 minutes.

Makes 24 servings.
