Margherita Pizza

Ingredients:

Margherita Pizza

  • 1/4 cup olive oil
  • 1 tablespoon minced garlic
  • 1/2 teaspoon sea salt
  • 8 Roma tomatoes, sliced
  • 2 (12-inch) pre-baked pizza crusts (available in local supermarkets)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded Fontina cheese (may substitute Gruyere or Gouda)
  • 10 fresh basil leaves, washed, dried, finely chopped
  • 1/2 cup freshly grated Parmesan cheese
  • 1/2 cup crumbled feta cheese

Directions:

  1. Preheat oven to 400°F.
  2. Stir together olive oil, garlic, and salt; toss with tomatoes and marinate for 15 minutes.
  3. Brush each pizza crust with tomato mixture.
  4. Sprinkle the pizza crusts evenly with mozzarella and Fontina cheeses.
  5. Arrange tomatoes on crust, then top with basil, Parmesan, and feta cheese.
  6. Bake until the cheese is bubbly and golden brown, about 10 minutes.

Makes 8 servings.
