Mari’s Gardens Microgreen Salad

Recipe compliments of Mari’s Gardens.

Ingredients:

Mari’s Gardens Microgreen Salad

  • 1 cup Mari’s micro greens mix
  • 1/2 cup Mari’s micro pea tendrils
  • 1/2 cup Mari’s spicy micro greens mix
  • 1 large Mari’s Katana tomato, cut into cubes (may substitute with regular tomatoes)
  • 1 small Mari’s Chioogia beet, thinly sliced (may substitute with regular beets)
  • 1/4 cup pine nuts (optional)

Dressing:

  • 2 tablespoons virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon honey
  • 1 clove garlic (optional)

Directions:

  1. Wash well and air-dry all micro greens in a colander.
  2. Be sure to handle micro greens with care as they are very fragile.
  3. Place micro greens in a medium bowl.
  4. Add tomatoes, beets and optional pine nuts.
  5. In a small bowl, add dressing ingredients, whisk, then drizzle over salad mix.

Serves 4.
