Mark's Favorite Pasta Sauce
- 1 can (11 1/2 oz) tomato-vegetable juice
- 1 teaspoon dried onion flakes
- 1 red bell pepper, cut into strips
- 1 cup diced eggplant or zucchini
- 1 can (14 1/2 oz) chopped tomatoes, including liquid
- 1 can (15 oz) small white beans, including liquid
- 1 jar (7 1/2 oz) roasted red peppers
- 2 to 3 tablespoons fresh basil leaves, coarsely chopped
- 4 to 8 oz pasta, cooked
