Maui Onion Pie

Ingredients:

Maui Onion Pie

  • 9-inch pie crust
  • 3 tablespoons butter or margarine
  • 1 tablespoon oil
  • 4 large Maui onions, thinly sliced
  • 2 eggs, beaten
  • 1 cup light cream
  • 2 tablespoons flour
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • Pinch of nutmeg
  • 1 cup grated Swiss cheese
  • 1 tomato, sliced
  • Chopped parsley

Directions:

  1. Preheat electric oven to 375°F.
  2. Partially bake the pie crust.
  3. In a skillet, heat butter and oil.
  4. Sauté onions until golden brown.
  5. In a bowl, combine eggs, cream, flour, salt, pepper, and nutmeg; mix well.
  6. Add onions and half of the cheese.
  7. Pour into prepared crust.
  8. Sprinkle with remaining cheese.
  9. Bake for 25 to 30 minutes or until golden brown.
  10. Garnish with tomato slices and parsley.

Makes 8 servings.
