Microwave Bread Pudding

Ingredients:

Microwave Bread Pudding

  • 2 cups whole or skim milk
  • 3/4 cup sugar
  • 3 tablespoons butter or margarine
  • 1/2 cup raisins or chopped dates
  • 2 eggs, beaten
  • 6 cups bread cubes
  • 2 teaspoons ground cinnamon
  • 1 teaspoon vanilla

Directions:

  1. In a microwave-safe bowl, combine the milk, sugar, butter, and raisins.
  2. Microwave, uncovered, on high power for 2 to 3 minutes.
  3. Add eggs, bread, cinnamon, and vanilla; mix well.
  4. Put into a microwave-safe tube pan or dish.
  5. Microwave, uncovered, at high power for 12 to 15 minutes.
  6. Let stand for 1/2 hour before serving.

Makes 8 servings.
