Microwave Mochi

Ingredients:

Microwave Mochi

  • 2 cups mochiko (sweet rice flour)
  • 1 cup sugar
  • 2 cups water
  • 1/2 teaspoon vanilla
  • 1/4 teaspoon red or green food coloring
  • Potato starch or cornstarch

Directions:

  1. Grease or spray a 5-cup microwave tube pan.
  2. In a medium bowl, combine all ingredients except potato starch.
  3. Mix until smooth.
  4. Pour mixture into prepared pan; cover with plastic wrap.
  5. Rotating pan several times during cooking, microwave at high power for 10 minutes.
  6. Let stand a few minutes.
  7. Pull mochi from sides of pan and invert onto a board dusted with the potato starch and let cool.
  8. Cut into 1/4-inch pieces.
  9. Coat each piece with potato starch.

Makes 36 pieces.
