Microwave Shanghai Gau

Ingredients:

Microwave Shanghai Gau

  • 1/2 package (12 oz size) dried red dates (about 1 cup)
  • 1 pound mochiko (sweet rice flour)
  • 3/4 cup sugar
  • 1/2 cup vegetable oil
  • 3/4 to 1 cup water
  • 1/2 cup shelled pine nuts or coarsely chopped walnuts

Directions:

  1. In a saucepan, cover dates with water.
  2. Bring to a boil, lower heat, and cook for 45 minutes or until dates are soft; drain.
  3. Remove and discard pits from dates.
  4. Line a 10 x 5-inch microwave safe dish with plastic wrap.
  5. Rotating dish several times during cooking, microwave on high power for 7 minutes.
  6. Carefully turn gau over; cook another 3 to 7 minutes or until done.
  7. Let stand uncovered for about 30 minutes.
  8. Pull gau from sides of dish and invert onto a platter.
  9. Cool and cut into serving pieces.

Makes 20 servings.
