Mint Crusted Lamb Chops

Ingredients:

Mint Crusted Lamb Chops

  • 8 lamb chops, cut 3/4-inch thick
  • 2 slices bacon, finely chopped
  • 4 cloves garlic, minced
  • 3 tablespoons finely chopped parsley
  • 2 tablespoons butter or margarine, softened
  • 2 tablespoons finely chopped mint
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 1/4 teaspoon pepper
  • 1 tablespoon white wine vinegar
  • 1 tablespoon vegetable oil for frying

Directions:

  1. Lightly score lamb chops.
  2. Combine remaining ingredients, except, to form a paste.
  3. Rub over chops and let stand 1 hour.
  4. In a skillet, heat oil, brown chops well on both sides.
  5. Lower heat; cover and simmer about 30 minutes.
  6. As an alternative, instead of frying and simmering the chops, broil or grill the chops to desired doneness.

Makes 4 servings.
