Mock Almond Roca

Ingredients:

1 14.4 ounce box honey graham crackers
1 cup (2 sticks) butter
1/2 cup sugar
1 1/2 cups slivered almonds or any chopped nuts of your choice

Directions:

  1. Preheat oven to 325°F.
  2. Line a cookie sheet with foil, folding up edges of foil to form a rim to prevent any spill-over from the butter mixture.
  3. Lay a single layer of crackers on foil.
  4. In a saucepan, melt butter; add sugar and cook until the mixture is thick and bubbly.
  5. Spread butter mixture evenly over crackers.
  6. Sprinkle nuts evenly over top.
  7. Bake for 7 minutes, turn pan and bake for another 7 minutes or until golden brown.
  8. Cool slightly and remove from foil.

Makes about 26 bars.
