MoeJoe's Stir Crazy Lilikoi Bars

Ingredients:

Crust:
3 cups all-purpose flour
1 1/2 cups powdered sugar
3 sticks cold unsalted butter

Filling:
6 eggs
2 cups granulated sugar
2/3 cup all-purpose flour
2/3 cup fresh lilikoi juice

Directions:

  1. Preheat oven to 350°F.
  2. Lightly grease a 9x13-inch baking pan.
  3. Combine flour, powdered sugar and butter to make a crumbly mixture.
  4. Press mixture into prepared pan.
  5. Bake for 25 minutes.
  6. Meanwhile, mix eggs, granulated sugar, flour, and lilikoi juice together.
  7. Pour mixture over crust and bake for 25 minutes longer.
  8. Let cool.
  9. Cut into 3" squares.

Makes 24 bars.
