Mole Poblano (Baked Chicken in Traditional Mexican Sauce)

Ingredients:

8 whole chicken legs (may substitute roasted potatoes or squash)
4 each dried pasilla, ancho, and mulato chilies, roasted (available at Mexican markets and some supermarkets; chipotle may be substituted for mulato, and pasilla can be substituted for all chilies)
1 cup chicken or vegetable broth, heated
1 can (14 ounces) tomatoes (drained) or 3 large fresh tomatoes
1 onion
4 cloves garlic
4 tablespoons raisins
4 tablespoons each almonds and pumpkin seeds, toasted
3 tablespoons sesame seeds plus additional for garnish, toasted
1 corn tortilla
1/2 teaspoon anise seeds or 1/4 teaspoon ground
1/2 teaspoon each ground pepper, cinnamon, ground cloves
1 teaspoon salt
2 ounces cacao nibs, (available at health food stores; may substitute with bittersweet chocolate)
3 tablespoons olive oil

Directions:

  1. Preheat oven to 350°F.
  2. Place chicken in a baking pan; bake until tender (about 45 minutes or until juices run clear).
  3. In a small bowl, add chilies and cover with hot broth.
  4. Soak until tender; chop chilies and set broth aside.
  5. In a heavy skillet over medium heat, dry roast whole tomatoes, onion, and garlic rotating when blackened on each side, (about 10 minutes on each side or until soft); cool.
  6. Skin tomatoes; chop roasted vegetables, then transfer to a blender; add chilies, raisins, nuts, seeds, tortilla, spices, salt, cacao nibs, broth; puree on high speed until smooth.
  7. Heat sauce in a skillet with oil over medium heat; mix well.
  8. Adjust seasonings to taste.
  9. Place chicken in sauce at low heat, stirring often, approximately 10-30 minutes, until fully cooked.
  10. Sprinkle with sesame seeds; serve with rice.
