Mom's Catfish Fillets

Ingredients:

Vegetable oil for deep frying
2 lb catfish fillets, cleaned, skinned, and cut in 1-inch-wide strips
Cornmeal Coating

Cornmeal Coating:
3 cups yellow cornmeal
1 cup flour
1 teaspoon fresh ground black pepper
1 tablespoon salt or 1 teaspoon seasoned salt mixed with 1 teaspoon McCormick® Season All

Directions:

  1. Heat oil to 375°F.
  2. Dredge the catfish in Cornmeal Coating, fry in hot oil until firm and golden brown, about 5 minutes.
  3. Serve immediately.

Makes 4 servings.

Cornmeal Coating:

  1. In a large bowl, combine the cornmeal, flour, pepper, and salt.

Makes 4 cups.
