- Heat oven to 350°F.
- In a large bowl, sift together flour, sugar, baking soda, cinnamon, and salt.
- Stir in apples, raisins, pecans, and carrots; mix well.
- In a small bowl, beat eggs with oil and vanilla; stir into flour mixture until batter is just combined.
- Spoon batter into paper lined muffin tins to about 2/3 full.
- Bake muffins for 35 minutes or until they are springy to the touch.
Makes about 48 muffins.
