Mountain Apple Pie

Ingredients:

5 cups mountain apples, peeled, cored and sliced
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 cup white sugar
1/4 cup brown sugar
3 tablespoons unsalted butter
Juice of 1 lemon
3 tablespoons tapioca OR 1/4 cup flour
2 unbaked 9-inch pie crusts

Egg wash:
1 beaten egg
2 tablespoons cream

Directions:

  1. Preheat oven to 375°F.
  2. Cook apples, salt, cinnamon, sugars, butter and lemon in pan until half done.
  3. Remove from heat, stir in tapioca and let cool.
  4. Place one unbaked pie crust in bottom of pie dish and add cooled apple mixture.
  5. Cut a vent in the top crust and place over pie, sealing the sides of the crusts together with a fork.
  6. For a glossy crust, brush top of pie crust with egg wash and bake for 45 minutes.
  7. Cool before slicing.

Serves 8.
