Mountain Apple Pie
Featured in the August 2016 Hookui.
Ingredients:
5 cups mountain apples, peeled, cored and sliced
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 cup white sugar
1/4 cup brown sugar
3 tablespoons unsalted butter
Juice of 1 lemon
3 tablespoons tapioca OR 1/4 cup flour
2 unbaked 9-inch pie crusts
Egg wash:
1 beaten egg
2 tablespoons cream
Directions:
- Preheat oven to 375°F.
- Cook apples, salt, cinnamon, sugars, butter and lemon in pan until half done.
- Remove from heat, stir in tapioca and let cool.
- Place one unbaked pie crust in bottom of pie dish and add cooled apple mixture.
- Cut a vent in the top crust and place over pie, sealing the sides of the crusts together with a fork.
- For a glossy crust, brush top of pie crust with egg wash and bake for 45 minutes.
- Cool before slicing.
Serves 8.
