Mountain Fresh Pudding

Ingredients:

2 1/2 envelopes unflavored gelatin
1/3 cup sugar
1 cup water
3 1/2 cups milk
1 teaspoon almond extract (or 1/2 teaspoon each lemon and vanilla extract)
Canned fruit of your choice
Fresh fruit of your choice

Directions:

  1. In a large saucepan, combine gelatin, sugar, and water over low heat and stir until gelatin and sugar are dissolved.
  2. Add milk and flavoring.
  3. Pour into a 9 x 13-inch pan and chill until firm.
  4. Cut into 1/2-inch squares and put in serving bowl.
  5. Add canned fruit (such as lychee, Mandarin oranges, maraschino cherries, peaches, apricots, etc.).
  6. Add fresh fruit (such as grapes, blueberries, raspberries, etc.) just before serving.

Makes about 12 servings.
