Mountain Fresh Pudding

Ingredients:
2 1/2 envelopes unflavored gelatin
1/3 cup sugar
1 cup water
3 1/2 cups milk
1 teaspoon almond extract (or 1/2 teaspoon each lemon and vanilla extract)
Canned fruit of your choice
Fresh fruit of your choice
Directions:
- In a large saucepan, combine gelatin, sugar, and water over low heat and stir until gelatin and sugar are dissolved.
- Add milk and flavoring.
- Pour into a 9 x 13-inch pan and chill until firm.
- Cut into 1/2-inch squares and put in serving bowl.
- Add canned fruit (such as lychee, Mandarin oranges, maraschino cherries, peaches, apricots, etc.).
- Add fresh fruit (such as grapes, blueberries, raspberries, etc.) just before serving.
Makes about 12 servings.
