Mountain Man Breakfast
Featured in the Honolulu Star-Advertiser on August 21, 2013.
Ingredients:
1 pound bacon, diced
1 medium onion, chopped
2 (2 pound each) bags frozen hash browns
12 large eggs, beaten
6 slices American cheese
Salt and pepper to taste
Directions:
- In 6-quart Dutch oven*, sauté bacon and onion; drain fat and set aside.
- Brown the hash browns in the Dutch oven; add back the bacon and onion mixture.
- Pour the eggs over the bacon/onion/hash browns and heat until cooked (about 15 minutes).
- Remove from heat and top off with cheese slices (will melt in a minute or two).
Makes 8 servings.
*Note: Scouts use an outdoor Dutch oven, which is a cast iron pot with lid that uses coals on the top and bottom as heat source; however, you can do the same with a kitchen Dutch oven in your "in-door" range/oven. Just preheat your oven and cook at 300°F.
