Panko Crusted Baked Fish Sticks

Ingredients:

Panko Crusted Baked Fish Sticks

  • 1 large egg, lightly beaten
  • 2 cups panko
  • 2 teaspoons Kosher salt
  • 1 teaspoon onion powder
  • 1/2 teaspoon cayenne pepper (optional)
  • 1 tablespoons olive oil
  • 1 1/2 pounds tilapia fillets, cut into wide strips (you may use any firm white fish)

*Low-fat mustard aioli dipping sauce (see ingredients and instructions below)

Low-fat mustard aioli dipping sauce:

  • 1 garlic clove, minced
  • 1/4 teaspoon Kosher salt
  • 1 cup low fat mayonnaise
  • 2 tablespoons coarse-grain mustard
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Tabasco (optional), or your favorite hot sauce

Directions:

  1. Preheat electric oven to 475°F, with racks on top and bottom of the oven.
  2. Line two baking sheets with aluminum foil; set aside.

Low-fat mustard aioli dipping sauce:

  1. Mix all ingredients together well.
  2. Cover tightly and refrigerate until ready to serve.

Makes 1 cup.

Panko Crusted Baked Fish Sticks:

  1. Place egg in a wide shallow bowl; set aside.
  2. In another bowl, combine panko, salt, onion powder, cayenne, and oil.
  3. Dip tilapia into egg, shaking off excess, then into panko mixture, pressing to adhere.
  4. Place on prepared baking sheets.
  5. Bake until lightly browned, 12 to 15 minutes, rotating baking sheets from top to bottom halfway through.
  6. Meanwhile, in a small bowl, stir together all the ingredients for the dipping sauce; season with salt and pepper.
  7. Serve fish sticks with dipping sauce and lemon wedges on the side.
