Papa’s Meatloaf

Ingredients:

Papa’s Meatloaf

  • 1 tablespoon olive oil
  • 1 cup minced onion
  • 1 clove garlic, minced
  • 3/4 cup ketchup
  • 1/4 cup apple cider vinegar
  • 3 tablespoons brown sugar
  • 1/4 teaspoon cayenne pepper
  • 3/4 cup low-sodium chicken broth
  • 1/2 chopped fresh parsley
  • 2 large eggs
  • 2/3 cup panko
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 2 pounds 15% fat ground beef
  • 6 strips bacon

Directions:

  1. Heat oven to 350°F.
  2. Line a rimmed baking sheet with parchment paper.
  3. In a small skillet, heat oil and sauté onion until soft, about 3 minutes.
  4. Add garlic and sauté another minute.
  5. Transfer onion mixture to a large bowl.
  6. Set aside.
  7. In a small saucepan, bring ketchup, vinegar, brown sugar, and cayenne pepper to a boil, then reduce heat and simmer until a syrup consistency, about 5 minutes.
  8. Combine chicken broth, parsley and 2 tablespoons of ketchup mixture to a blender and blend until smooth.
  9. Add broth mixture, eggs, panko, Parmesan cheese, salt, and pepper to onion mixture bowl; mix together.
  10. Add beef and thoroughly combine with hands.
  11. Transfer meatloaf mixture to prepared pan and form into a smooth loaf.
  12. Spread remaining ketchup mixture over top of meatloaf and drape bacon strips crisscrossed over top.
  13. Bake for 60 to 70 minutes or until bacon is crisp.
  14. Let loaf rest for about 10 minutes before slicing.
