Papaya Cheese Pie

Ingredients:

Papaya Cheese Pie

  • 2 firm-ripe papayas, peeled, halved, and seeded
  • 2 tablespoons cornstarch
  • 2 pkg (8 oz size) cream cheese
  • 1/2 cup sugar
  • 3 eggs
  • 1 teaspoon grated lemon rind
  • 9-inch unbaked pie shell
  • Kiwi slices
  • 1/4 cup melted apple jelly
  • Mint sprigs

Directions:

  1. Preheat electric oven to 375°F.
  2. In a blender, puree 1 papaya half; cut remaining 3 halves into 1/4-inch slices.
  3. Combine puree and cornstarch.
  4. In large bowl of electric mixer, beat cream cheese and sugar.
  5. Add eggs and lemon rind; beat until mixture is smooth.
  6. Add papaya puree and mix well.
  7. Pour into pie shell and bake for 25 to 30 minutes.
  8. Cool.
  9. Top with papaya and kiwi slices; brush with jelly.
  10. Garnish with mint sprigs.

Makes 8 servings.
